Dr. \u00d6zge Samanc\u0131, Head of Gastronomy and Culinary Arts Department<\/p>\n<p>The term pastry shop, which was the first meeting place of many couples in the past, is said to be derived from the Persian words &#8220;hane,&#8221; meaning &#8220;place,&#8221; and Italian &#8220;pasta,&#8221; meaning dough. With the westernization movement after the Tanzimat, the patisserie culture entered our lives with the return of the non-Muslims and the population who went to Russia and Poland for business. The patisseries, whose legendary desserts and witnessing history, hosted many taste lovers, including famous names. Although some of these deep-rooted patisseries are not in our lives, there are still some who continue to host us! Here are some of them!<\/p>\n<h2><strong>1. Lebon Bakery<\/strong><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7054\" src=\"https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/Lebon-Pastanesi.jpg\" alt=\"Lebon Pastanesi\" width=\"750\" height=\"500\" srcset=\"https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/Lebon-Pastanesi.jpg 750w, https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/Lebon-Pastanesi-300x200.jpg 300w\" sizes=\"auto, (max-width: 750px) 100vw, 750px\" \/><\/p>\n<p>Turkey&#8217;s first patisserie, Lebon, was established in 1886 by Eduard Lebon, who left the kitchen of the French Embassy, in shop 362, on the corner of Passage Oriental on Istiklal Street. The motto of Lebon Patisserie, which has regulars such as Nam\u0131k Kemal, Pierre Loti, and Yahya Kemal, was &#8220;Chez Lebon, tout est bon,&#8221; that is, &#8220;Everything is good in Lebon.&#8221; The interior design of Lebon Patisserie, which is famous for its French dragees, cakes, and service quality, bears the signature of Alexandre Vallaury &#8211; as can be understood from the &#8220;Art Nouveau&#8221; tile wall panels. After being bought by Avedis Ohanyan \u00c7ak\u0131r in 1940, these fascinating wall panels were identified with the Markiz Patisserie.<\/p>\n<h2><strong>2. Markiz Patisserie<\/strong><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7056\" src=\"https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/Markiz-Pastanesi.jpg\" alt=\"Markiz Pastanesi\" width=\"750\" height=\"500\" srcset=\"https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/Markiz-Pastanesi.jpg 750w, https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/Markiz-Pastanesi-300x200.jpg 300w\" sizes=\"auto, (max-width: 750px) 100vw, 750px\" \/><\/p>\n<p>Lebon Patisserie, bought by Avedis Ohanyan \u00c7ak\u0131r in 1940 and changed hands, received great acclaim until 1980 under Markiz Patisserie. However, with the sale of Passage Oriental, the patisserie, which hosted valuable names such as Abidin Dino, Haldun Taner, and Mina Urgan, unfortunately, had to close its doors. Markiz Patisserie, which was restored and opened again in 2003, was closed again in 2016 with another sad news. Markiz Patisserie, which took its place in memories with its &#8220;Art Nouveau&#8221; ceramic panels and chocolate cakes, was preferred by the urban nobility, literati, and intellectuals of the period, just like Lebon.<\/p>\n<h2><strong>3. \u0130<\/strong><strong>nci Patisserie<\/strong><\/h2>\n<div id=\"attachment_7058\" style=\"width: 730px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-7058\" class=\"wp-image-7058 size-full\" src=\"https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/inci-pastanesi.webp\" alt=\"inci pastanesi\" width=\"720\" height=\"486\" srcset=\"https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/inci-pastanesi.webp 720w, https:\/\/perapalace.com\/wp-content\/uploads\/2022\/05\/inci-pastanesi-300x203.webp 300w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><p id=\"caption-attachment-7058\" class=\"wp-caption-text\">Source: https:\/\/ykv.s3.eu-central-1.amazonaws.com\/img\/w\/yazi\/mgt\/incipastanesi-yemekyasam-kapakgizemerbas.webp<\/p><\/div>\n<p>A sweet stop that must be visited before going to an exhibition or play in Beyo\u011flu is the first place that comes to mind when profiteroles are mentioned. According to the rumor spread among the people, Lucas Zigoridis, the founder of the historical \u0130nci Patisserie, created the recipe for profiteroles inspired by a French dessert. In 1944, he opened the Historical \u0130nci Patisserie, which is still in existence from the past to the present, in shop number 124 in the Cercle d&#8217;Orient building.<\/p>\n<p>However, \u0130nci Patisserie, which was evacuated in 2012, continues to bring its profiteroles, whose fame goes beyond cities, to its guests in Beyo\u011flu Mis Street after a short break.<\/p>\n<h2><strong>4. It hosted such precious names until that terrible fire in 1967! Enough to envy time travel, take all literature lovers to Woody Allen&#8217;s line &#8220;I want to escape from my own time to the golden age&#8221; in Midnight in Paris! So many valuable names, from Ahmet Hamdi Tanp\u0131nar to Arif Dino, from Sabahattin Ali to Cavit Yama\u00e7, were the regulars of this humble patisserie.<\/p>\n<h2><strong>5. In 1978, Mahmur Ta\u015f\u00e7\u0131o\u011flu, together with his two partners,<\/p>\n<p>Savoy Patisserie became the new owners. Since then, it has continued to preserve the deep-rooted history of the Savoy Patisserie and its flavors handed down from generation to generation.<\/p>\n<h2><strong>6. Baylan Patisserie, the same age as the Republic of Turkey, was founded in 1923 by Filip Lenas. Karak\u00f6y branches were opened in 1925, and the Kad\u0131k\u00f6y branch was opened in 1962. The signature flavor of Baylan Patisserie was Kup Griye, which is among the Classic Istanbul Tastes and whose recipe was created by Harry Lenas. Kup Griye, prepared by mixing vanilla, caramel ice cream, whipped cream, honey almond, and caramel sauce, has welcomed its guests with the same recipe and flavor since 1954.<\/p>\n<h2><strong>7. Then, we hold on tight to our day, where many patisseries remain in good memories and stories.
